Banana Sour Cream Pancakes (Barefoot Contessa)

When I was looking for a good recipe for my family I seemed to search and search for one that Both Ryder and Brett would enjoy and When i bought this Cook book my search was over these are amazing.. One of the funny things, is when I lived in California, i always bought cheap syrup, well low and behold when I moved to Canada, i learned what REAL syrup was and i will never by the cheap stuff again, it is well worth the purchase and your family will love it....

Banana Sour Cream Pancakes

1 1/2 Cups flour
3 tblsp sugar
2 tsp kosher salt
1/2 C of Sour Cream
3/4 C plus 1 tblsp of milk
2 extra large eggs
1 tsp pure Vanilla
t tsp grated lemon zest (  i don't put this in due to my allergy)
unsalted butter
2 ripe bananas diced plus extra for serving (i love lots extra)
Pure Maple Syrup

In a medium Bowl, mix flour, sugar, baking powder and salt, whisk together the sour cream, milk, eggs, vanilla and lemon zest.  Add the wet ingredients to the dry ones, mixing only until combined.

Melt 1 tblsp of butter in a large skillet over medium-low heat until it bubbles.  Ladle the pancake batter into pan,  distribute a rounded tablespoon of bananas on each pancake.  Cook for 2 to 3 minutes until bubbles appear on top and the underside is nicely browned.   Flip and cook another minute, cook more and serve with sliced bananas and butter and maple syrup.
